Divide dough into two balls.
Color one ball red, and mix in the jimmies (to create "seeds")
Divide the other ball into two balls. Leave one ball white and color the other green.
Roll red ball into a thick log about 16in long.
Roll white ball into a thick log about 16in long.
Flatten slightly and place over red log in an arch.
Roll green ball into a thick log about 16in long, flatten slightly and place in arch over the white to make the "rind"
Wrap in plastic and chill at least 2 hours. Slice into 1/4in pieces.
Dip one side into granulated sugar.
Place sugar side up on cookie sheet lined with parchment paper.
Bake at 350deg for 10 minutes.
