Suggest a better descriptionSpray a large non stick frying pan with olive oil and fry the chicken until all sealed. Then add the leeks, yellow pepper, mushrooms and garlic and cook for around 5 min, stirring continuously. Add the curry paste, ginger and chilli and cook for a further minute. Finally add the cocunut milk, mango chutney and corriander and stir together. Bring to the boil then allow to simmer over a medium heat for 20 mins. Serve with 125g Pilau rice for an additional 6 pro points.
