1) on sauté setting (medium)melt butter in the oil, add the shallows and cook stirring often until soft. Add both types of mushrooms and cook, stirring often, cook until they give off their liquid and reduce about 4 minutes.
2) Stir in garlic and cook a few seconds. then stir in wheat berries, basil, thyme, and salt and mix well. Pour wine in and scrape the bottom of pot to get up any browned bits. Stir in broth and shot off heat. Lock lid and set on pressure cook Max/High for 30 minutes with the keep warm setting off.
3)when done let the pressure come back to normal naturally (about 30 minutes). Unlatch lid and stir.
4) put the instant pot on sauté (medium) again for about 2 minutes stirring constantly until excess liquid boils down to a thickened sauce. Turn off the heat and stir in the cheese. Let set for 5 minutes to blend the flavors. Serve warm
