The chewiness of the wheat berries plus the crunch of cashews gives this salad a great texture.
Mix all ingredients in a bowl and chill. Makes 11 - 1/2 c. servings.
Notes: Wheat berries can be purchased at health food stores and some grocery stores. Follow the package directions to cook them in advance, then cool before additing the remaining ingredients. This recipe came from Minter Laner Amber Brokaw and was unveiled at the 2010 ladies retreat salad supper.
