Benkert's Bakery wheat bread is what I grew up on-with a tweak of honey.

1. Preheat oven to 350 degrees.
2. Measure Yeast and Sugar.
3. Add Water and whisk 1 minute; set aside for 10 minutes.
4. Meanwhile measure together Salt, Whole Wheat Flour, Bread Flour, Shortening, and Honey.
5. When yeast mixture is ready combine it with the dry ingredients.
6. Mix on low for 3 minutes, then on speed 2 for4 minutes.
7. Add to buttered Insta Pot set on Sous Vide at 90 degrees for 1 hour.
8. Knead for 2 minutes in stand mixer at speed 2; let rest 5 minutes; shape into loaf and place in a greased loaf pan.
9. Let rise 50 minutes or until finger indent fails to disappear.
10. Score loaf.
11. Bake 30 minutes at 350 degrees.
12. Brush top with butter; cool slightly then remove to wire rack.
