An easy and quick recipe that's always a comforting favorite.
In a medium to large pot add a small amount of olive oil and sauté onions, celery, garlic until onion is translucent. Add potatoes and ham and cook for a minute to release ham fat.
Increase the heat to high and add beans, water, chicken bouillon and seasonings. Let boil for 5-6 minutes. Cover and reduce heat to medium low, cook until potatoes are done and soup has reduced by 1/4.
• If you like your soup thinner you can add more water.
•This soup will be quite creamy and thick.
•If you have a ham bone throw it in there as well or you can use a ham hock to add more flavor.
•Green onions also make a great garnish.
Make sure to taste the broth after boiling before adding salt.
