Suggest a better descriptionIn a large covered pot, soak the beans fully submerged in water overnight; rinse and drain. In a large saucepan bring the beans, tomatoes, and water to a boiling. Add the pasta and simmer, uncovered, according to pasta package directions, stirring frequently. Remove from heat. Add the arugula, vinegar, and pepper to taste. Serve topped with cheese.
