Heat Oil in large sauce pan over medium heat, add onions and garlic. Saute until tender (about 10 min). Add cumin and stir until fragrant (about 30 seconds). Add ground turkey, saute until no longer pink (about 4 minutes). Add 3 cups of stock, barley, jalapeno, and spices. Cover and simmer, stirring occasionally, until Barley is almost tender (about 40 min). Add beans and simmer uncovered until barley is tender and chili is thick (about 15 min).
Optionally top with shredded cheddar cheese and green onions.
This goes great with corn bread.
