This recipe was given to me by Tracy Ridd who says: "This recipe is from a lady who Brian used to home-teach in a little Texas town, years ago. She lived in a little trailer with her husband and about 7 or 8 kids, and she made this recipe every day! She also made it for us, and we loved it! It always turns out good-- it's very forgiving!"
TO MAKE BREAD:
Pour water into a mixer bowl and stir in the sugar. Sprinkle the yeast on top, stir, and let sit for a few minutes to proof... until the yeast bubbles. Add oil and salt. Mix in 1/2 of the 5 pound bag of flour (about 8 1/2 cups). Add the remaining amount of flour, 1 cup at a time. (You can use some of the flour to knead the dough with.)
Knead the dough for 5-8 minutes, or until smooth. Put a bit of oil in 2 bowls and turn dough over in it so the greased side is up. Cover and let rise for 1 1/2 hours.
Punch down; shape into 5 loaves of bread (or 3 loaves of bread and 1 batch of cinnamon rolls). One batch of cinnamon rolls will make 24 rolls, or two 9x13 pans of 12 each.
Let rise again for about 30 minutes.
Bake at 350 F. for 30 minutes.
FOR CINNAMON ROLLS (WHICH ARE REALLY GOOD, BUT DEADLY!!):
Roll dough into a rectangle and spread filling mixture on top. Roll dough up and slice.
Bake at 350 F. for 30 minutes. Makes 24 cinnamon rolls (2 9x13 pans/12 each).
Mix ingredients to make icing. Spread on top of cinnamon rolls.
