1. In a large saucepan combine water, lemon pepper and cumin seed, bring to a boil. Add chicken and reduce to low heat. Cover and simmer 20-28 minutes or til chicken is fork tender and juices run clear. Remove chicken from water and cut into bite sized pieces and return to the pan.
2. Spray medium skillet with cooking spray, heat over medium heat. Add 1 minced garlic clove and onions and cook til tender. Add cooked onions, corn, chiles, ground cuming and 2 to 3 tablespoons of lime juice to chicken mixture. Bring to a boil. Add beans and continue cooking until heated.
You can save time by using rotisserie chicken. Garnish with corn chips, cheese, salsa, avocado and cilantro as desired.
