Easy, inexpensive, filling alternative to regular chili. Chicken and Great Northerns mingle with green chiles and savory spices.
In a medium sauce pot, heat olive oil and brown the diced onion until translucent. Add chicken chunks, broth, oregano, cumin, black pepper and chiles. Bring to a boil then reduce to a medium-low simmer for 1 hour. Remove chicken and shred using 2 forks. Return chicken to the pot and add both cans of beans. Stir well, return to a boil, then reduce to a low simmer for additional 1 hour.
Serve with shredded cheese. Spicy cornbread makes a fantastic accompaniment.
