Mix all the dry ingredients. Add the cup of cream at once and stir in with a fork. If the dough is too soft, add a bit more flour. Sprinkle some of the spelt flour on a sheet of waxed paper. Sprinkle a bit more of the spelt flour on top of the dough. Pat out 1/2 to 3/4 inch thick and cut into 8-10 biscuits. Bake at 350 for 20 to 25 minutes or until done and lightly browned.
