Mix starter in small bowl, rest overnight or at least 8 hours
Combine dough in a mixing bowl, around 7 minutes using bread maker
Cover for 1 hour, deflate and turnover the dough, repeat for 4 hours
Turn dough out into a lightly greased surface, divide into 3, shaped into flattened oval shape, leave for 15 minutes
Lightly grease a parchment shape into 8" logs, leave for 1 hour
Refrigerate overnight, or at least 8 hours
Take dough out of refrigerator and leave at room temperature for 90 minutes
Bake in oven preheated at 220 degrees Celsius with bowl of water at the bottom of oven
