Great way to use up those over ripe bananas when you need a change from banana bread. The kids love them even more if you throw in some mini-chocolate chips.
1. Preheat waffle iron according to manufacturer's directions.
2. Meanwhile, brown butter, heat a heavy bottom skillet on medium heat. Add sliced butter, whisking frequently, continue to cook the butter until melted. The butter will start to foam and browned specks will begin to form on the bottom of the pan. The butter should have a nutty aroma at this stage. Watch the butter carefully because it can go from brown to burnt in seconds. Remove butter from the heat and let cool to room temperature.
3.Combine flours, baking powder, baking soda, salt, and spices into a food food processor; pulse to combine, about 3 seconds.
4. In a small bowl mash bananas (about 2) and add buttermilk, egg, browned butter, and extracts and whisk together until combined. With processor running add wet mixture to dry. Run for about 30 seconds until combined and thickened.
5. Ladle the recommended amount of batter into the waffle iron . Close lid and bake until waffle is golden brown. About two minutes. Serve immediately or transfer to plate and keep warm in 200 degree oven. Repeat with remaining batter.
Note: Waffles freeze well. Place completely cooled waffles in a freezer bag with wax paper between them. Simple reheat frozen waffle in the toaster.
