As best as I know how to make, french style whole wheat crepes.
1. Whisk together eggs, milk, flour, salt, and butter until smooth. Cover and refrigerate for one hour.
2. Heat a skillet over medium-high to high heat and brush with butter. Pour 1/4 cup crepe batter into the pan, then tilt to completely coat the surface of the pan. Cook 2 to 5 minutes, turning once, until golden. Repeat with remaining batter.
