a healthy and moist muffin
- heat oven to 400 F
- place 16 foil muffin cups in muffin pans
- in small bowl, pour buttermilk over oats and set aside
- in large bowl mix: yogurt, sugar and egg
- stir in: flour & soda
- add oat mixture
- mix in strawberries
- fill each muffin cup half way and place a slice of cream cheese on top
- divide the remaining batter in the muffin cups
- bake 15-20 minutes or until golden brown.
