Wrap this crab salad in thin planks of cucumber or zucchini or simply serve it on top of cucumber or zucchini slices for a quick and easy gluten-free lunch or snack
Drain crab meat and add to a small bowl. If using King Crab, see instructions below. Mix crab meat with salad dressing, of choice. NOTE, choose from one of the following: no-mayo, get recipe here, light mayonnaise, 0% fat Greek yogurt, or light Sour Cream. Optional, add celery, onion, and/or bell pepper. Slice cucumber or zucchini, top with crabmeat and serve. OR remove ends of cucumber, and using a mandoline, slice into thin planks. Add a tablespoon of crab salad to one end of each cucumber or zucchini plank and roll up. Stand roll on end. Repeat until all crab salad is used. Optional, top with sunflower sprouts or chives.
KING CRAB LEGS—thaw cooked crab legs, if purchased cooked and frozen. Remove crab meat from shell and cut into one inch chunks. If crab legs are uncooked, add to salted, boiling water and cook about 5 minutes. Remove from boiling water and cool before removing crab meat from shell and cutting into chunks.
