Melt butter in large saucepan or Dutch oven; add onion and saute until tender. Add remaining ingredients (except shrimp, if using).
Bring to a boil, then cover and simmer 20-25 minutes, stirring occasionally.
If substituting shrimp, add at this point. Cover and simmer 10 more minutes. If necessary, add water to thin mixture.
