Adapted from a Giada recipe, this is flavorful and relatively healthy, especially compared to a lot of rich potato gratin recipes. Enjoy!
*Note: if using acorn squash, to avoid the trauma of peeling that ribbed beast, slice it in half, remove the seeds, and place cut side down in a casserole dish. Fill with 1/2" of water, and microwave until the flesh is tender enough to be scooped out, 5-10 minutes.
1. Swipe the bottom of the stoneware with the butter.
2. Layer the ingredients as follows:
-squash, pesto, mozzarella
-potato, pesto, mozzarella
-squash, pesto, mozzarella
-potato, pesto, mozzarella
3. Top with enough chicken broth to mostly cover, but not drown.
4. Cook 6-8 hours on low in the crockpot, until bubbly. Serve as a side dish to a meat, or with a salad as a main course. Enjoy!
