An old fashioned winter style cider drink. Can be served spiked with peach brandy for best flavor.
1. Prepare the spice bag. Contain all the spices in a cloth bag. Tie the bag with a kitchen string to secure it. Set the spice bag aside.
2. Make the spice liquid. Pour about 6 cups water and sugar in a tall stockpot. Toss in the prepared spice bag. Place the stockpot over high heat. Bring the mixture to a boil. Remove the pot from the heat after 2-3 minutes of boiling the mixture. Set the spice liquid aside and allow it to stand overnight.
3. Add the other ingredients. Stir in the tea, orange juice, lemon juice, and apple cider to the spice liquid. Add remaining 6 cups water. Lightly stir before placing the pot over medium heat. Allow the wassail to gently simmer until it is heated through. Serve the wassail hot.
4. If desired, pour a jigger of peach brandy to each cup before pouring the hot wassail.
Making a spice bag is annoying, it is much easier to purchase the premade spice bags, break your spices small enough to fit into one or two of them to make the spice liquid base. Don't try to speed up the process, you won't get the full effect of the spices, it does need to steep overnight.
