Grate the cheddar as finely as possible. This will help save your food processor from burning out.
In a large bowl, combine the grated cheddar with the whipped cream cheese. Add lemon juice and sugar. Put the garlic through a garlic press and into the mixture. If you don’t have a garlic press, mince the garlic as finely as possible. Combine as well as possible with a large spoon. It’ll be kinda tuff. Load mixture into your food processor and begin mixing at low. When it starts to loosen up, switch to high. Periodically stop the process to scrape down the sides and give your food processor a rest. Keep close eye the whole time. It’s pretty easy to burn out the food processor. When desired consistency is reached, load into air-tight containers and refrigerate. Tastes best if allowed to sit in the fridge for a couple days. Serve "as is" as a spread, or whip with a hand blender for more of a dip.
