Put walnuts and dates thru coarse blade of a grinder or chop coarsely thru food processor. Add sugar, eggs, and 1 1/2 cups coconut. Mix well. Shape into 1 inch balls. Roll balls in remaining coconut. Place an well greased cookie sheet and bake in a preheated oven at 375 degrees for 10-12 minutes or ubtil coconut is toasted. Cookies will be soft but will harden as it cools.
