An easy fluffy no bake cheesecake
Place can of evaporated milk in freezer 30 min. (needs to be ice cold) or place in refrigerator the night before.
Mix Jello with hot water in small bowl; stir until dissolved and put in freezer for a quick set; you want it to thicken some, but NOT set; stir once at about 20 minutes; then put in refrigerator until ready to use.
Mix graham cracker crumbs, confectioners sugar, and melted butter until well blended; press 3/4 of mixture into bottom of a 9x13 pan.
Mix cream cheese, sugar, vanilla, and optional lemon juice until well blended; set aside.
When Jello starts to thicken- beat evaporated milk until fluffy and thick like whip cream. Add cream cheese mixture. Slowly mix in Jello. Pour into pan and sprinkle with remaining graham cracker crumbs. Refrigerate 2 hours before serving. Keep stored in refrigerator covered.
