The world's best Granola Bar is made without three "W" bad ingredients, White sugar, refined Wheat, White salt. It is gluten free, dairy free and vegan. The inspiration comes from my daughter's love to all kinds of granola bars on the market. But, none of them made with clean ingredients like this one.
This is very simple, we will keep dry and wet ingredients separate. Mix oats, almond flour, roasted coconut and salt together in mixing bowl. Melt coconut oil in microwave or double broiler along with Jaggery, about 3 min. Mix well with hand mixer at low speed for about 2-3 min, until the mixture is smooth. If using brown or cane sugar, add directly to the dry mix. Add honey and vanilla extract and mix for another 2 min.
While the mixture is still warm, mix the dry ingredient, work quickly to mix everything evenly. if mixture is still warm, wait few min before mixing the chocolate chips. Optionally, you can any kind of nuts (almonds, cashews, pecans, pistachios), cranberries or raisins of your choice.
Press firmly the mixture into the 9.5" x 13" baking sheet with parchment paper at bottom. Bake in pre-heated oven, 320 F, for 30 min. Remove from the oven and let it cool down for about 15-20 before cutting into square or bar shape.
Make sure to use dairy free chocolate chips for vegan version.
Almond flour can easily be replaced with all purpose flour, whole wheat flour or gluten free flour.
