This is a staple at Thanksgiving for our family

In a large pan, cover yams in water and boil until tender. The time really varies depending on the size of the selected yams. Cool and peel. Slice in 3/8" thick slices.
Preheat oven to 350 degrees.
Layer sliced yams and apples in a buttered casserole dish.
Prepare sauce:
Combine sugar, salt, and corn starch in pan and mix well. Add 1 cup water, lemon juice, and butter. Bring to a boil. Pour over yams and apples in dish.
Bake uncovered for 1 hour.
We go heavier on the lemon and the apples. The yams have to be in there because it is Thanksgiving after all, but we really want the apples.
