Suggest a better descriptionCoat the bottom and sides of a 10-inch pie plate that is at least 1 inch deep (or a 9-inch square baking pan) with nonstick cooking spray.
In a bowl or food processor, mash the yams and add 4 tablespoons of the melted butter, the brown sugar, corn syrup, sherry and cinnamon. Blend until creamy.
Spread half of the yam mixture into the prepared pan. Arrange half of the apples over the yam layer. Repeat and brush the top layer of apples with the remaining 2 tablespoons melted butter, sealing the apples so that they will not turn color.
You can freeze the casserole for one month or keep refrigerated for up to 4 days.
To serve: Bake, uncovered, at 350 degrees for 30 minutes, until the apples become golden brown.
Note: If you prefer to use fresh yams or sweet potatoes, bake six medium yams at 425 degrees for 50 to 60 minutes. Remove from the oven, cut in half and scoop out the flesh. Proceed as directed.
