Similar to carrot cake, this cake uses grated yams (raw). This came from my grandmother's recipe file.
Combine oil & Sugar, mix well. Sift together remaining dry ingredients. Sift half of dry ingredients into sugar mixture, blend. Sift in remaining dry ingredients alternatively with eggs, one at a time, mixing well after each addition. Add yams and mix well, then mix in pecans, pour into lightly oiled 10" tube pan. Bake in slow oven (325) about one hour and 10 minutes. Cool in pan upright. Remove from pan. When cool, frost with orange glaze.
Orange Glaze
Combine sugar and cornstarch in sauce pan. Add juices slowly and stir until smooth. Add remaining ingredients. Cook over low heat until thick and glossy, cool and spread on cake.
