Preheat oven to 350. Spray baking dish with non-stick spray, and put on baking sheet. Stir together heavy cream and salt in large bowl. Slice yams into bowl coating the slice as you work. Layer 1/3 of the yams in the baking dish sprinkle half of the cheese. Repeat with another 1/3 of the yams and the remainder of the cheese. Top with the remainder off the yams . Pour any remaining yam-cream mixture over the top. Bake uncovered on center rack for about 30 min and remove from oven.
Press slotted spoon or slotted spatula carefully against top layer to allow liquid to flow over the top crust. Replace pan in oven and bake for 30 more min. Remove pan and repeat. Replace pan in oven and cook for an additional 40-45 min. Remove from oven and let rest for 15 min.
