If you are trying to reduce nightshades (including potatoes) or you want a dish with a lower glycemic index, this one is a winner. Well, actually it is a winner in its own right. Many prefer it to potatoes. Depending on spicing, you can make it sweeter or more savory.

Boil Yams:
Boil water and related ingredients in a pan large enough to have at least 2 inches from the top of the pot when are covered by 1 inch with water.
Peel yams. Chop into large similarly sized pieces.
Drop into boiling water making sure to have them close to the water. Use a slotted spoon as an alternative way to get into the water.
Boil for 20 minutes or until a fork comes out tender.
Heat Milk and Ghee:
In a pan large enough to contain the milk and ghee, heat the milk and ghee over medium heat.
Mashing:
With a mixer (or hand masher), start by mashing the potatoes.
Add Milk with Ghee and spices while mixer is still going. Mix until smooth.
If you like a bit of texture, hold out some of the yam and chop it. Add to the mixture and stir in by hand.
Variations:
Add other spices. Sweet ones make it more like Thanksgiving. Savory make it more substantial.
In the June 13th class will make twice, once with milk and once with milk and orange juice. Maybe all orange juice.
