Great side dish to complement salmon main course.
Preheat oven to 360 deg F.
In a bowl, toss yams sliced garlic, thyme, nutmeg and olive oil. Season with salt and pepper to taste.
Spread evenly on baking sheet and roast in over until tender (15-20 minutes).
In a skillet heat butter over medium heat, add shallot, prosciutto and fennel, cook until tender (4-8 minutes).
Add mushrooms and continue to cook until tender (3-5 minutes)
Add garlic and cook for another 30-45 seconds, remove from heat.
Place a serving portion of yams on plate (can use 3-4 inch ring to shape on plate)
Spoon mushroom mixture over and serve.
