Brown the sausage in a skillet, stirring until crumbly; drain. Sprinkle into a greased 2-quart baking dish & top with 1 cup shredded cheese.
Combine the corn muffin mix, grits, butter, eggs, and millk in a bowl and mix well. Pour into the prepared dish. Top with 1/2 cup cheese. Bake at 325 degrees for 45 minutes.
Dish may be prepared in advance & stored in refrigerator or freezer until needed. Allow frozen casserole to thaw before baking; increase baking time to 55 minutes for a refrigerated casserole.
