So the important thing about this recipe is that everything is based on the size of the noodles and how many servings you want. The proportions above make 4 servings but you can make 8 servings easily by doubling all ingredients except the lasagna noodles. I typically do it this way because it allows you to use up the whole package of noodles and freeze 1 or more lasagnas for later. You can make a 2 serving size lasagna by using a loaf pan, a 4 serving size lasagna by using a square 8 x 8 pyrex dish or an 8 serving lasagna by using a 3 qt rectangular pyrex dish.
Brown the ground beef. Add the diced onion and garlic and cook until the onions are tender.
In a bowl mix together the cottage cheese , the parmesan and half of the mozzarella. Add the parsley and mix well.
Choose the size dish (s) you want to use and put a tablespoon of sauce in the bottom for each loaf pan. Use 2 tablespoons for a square dish or 4 tablespoons for a 3qt dish. Place 1 or more noodles on top of the sauce to cover the bottom of the dish (1 for loaf pan, 2 for square, 4 for rectangle). Now sprinkle
