Easy and works great with pork chops, as well!
- Rinse and pat dry the pork loin. Rub the entire loin with poultry seasoning.
- Place fat side up in a glass pan. Cover with foil and bake at 350
- After 30 minutes, remove foil and add a few pieces of butter to pan, replace foil.
- Bake for 40-60 minutes (slice to check).
- Remove pork loin from oven. Let it sit for at least 5 minutes before cutting.
- Remove to a plate and scrape pan.
- Pour the "juice" over pork after slicing.
Gravy:
- Simmer equal parts of chicken broth and half & half in the same pan (Can also use splash of white cooking wine).
