Try this yummy potato soup recipe, or contribute your own.
Suggest a better descriptionsaute the chopped onion in butter/margarine over low heat until soft. add the flour and mix until its a blob. turn up the fire to medium and slowly add the milk stirring constantly to keep it smooth. bring it to a boil and 2 tablespoons consomme (chicken soup mix) and white wine. let it boil for a minute then add the water and chopped potatoes. let it come back to a boil stirring to keep the potatoes from sticking to the bottom and add onion and garlic powder. turn it down and simmer for 20 minutes. blend with an immersion blender until mostly smooth (we like a few potato lumps) and adjust seasoning . add shredded cheese if desired. the soup will thicken considerably when cooled so if you're planning to reheat it use some milk to thin it back to soup. sprinkle Parmesan on top to when serving.
