Day Before: In Crockpot:
1 chicken
4-6 cups chicken broth
2 tsp poultry seasoning
Salt and Pepper
1/2 hour before done...add 1/2 bunch of celery and 1/2 onion.
When done, let cool and debone chicken, reserve liquid and cooked veggies.
In very large pan (layer)...croutons, 5tsp poultry seasoning, 1/2 uncooked onion and celery. Don't mix. On top place cooked onion and celery & onion, chicken, almonds, cranberries & 2 tsp. poultry seasoning. Cover and refrigerate.
Turkey Day:
Skim fat off broth, warm in microwave
Pour 1 quart over dressing mix
Toss gently
Salt to taste
If needed...Add another quart of broth (make sure moist)
Toss lightly
Use as stuffing
Bake remainder for 1 hour at 350.
