These are great side for a number of dishes, all year round. If you like potatoes, you'll love these. And they are easy to do.
Wash potatoes and cut into bite size chunks. (Do not peel)Boil potatoes until fork tender. In the mean time, chop parsley and set aside. When potatoes are done, drain water (using lid) from pot. Add butter, salt, pepper and parsley and combine gently with fork or spatula. Cover and let rest for a few minutes before serving.
