In a tall glass squeese out lime juice and add mint leaves. Smash the leaves with a wood spoon.
Add lime rind to glass, add crushed ice and top with Diet 7-Up.
Stir and drink through a straw to avoid the mint.
Alternate Recipe: Use 1 tsp. Stevia and replace the 7-Up with 4 oz. club soda
