Orzo, also known as risoni, is an Italian pastina (little pasta) that goes best in soups, salads, and sides. We've gone the salad route and paired it with juicy cherry tomatoes, crisp onion, and refreshing cucumber, all tossed in a tangy lemon vinaigrette. It'll have you saying "Molto Bene" before you know it!

Boil the orzo in salted water according to the package directions. Drain cooked orzo and set aside.
In a large mixing bowl, add the lemon juice, lemon zest, olive oil, red wine vinegar, maple syrup, salt, and pepper, whisking together to create a vinaigrette dressing.
Add the orzo and the remaining ingredients to the bowl, stirring to coat in the vinaigrette.
Serve warm or chilled.
Storage: Store pasta salad in an airtight container in the fridge for up to five days.
