This is good.
Beat together sugar, oil, eggs, lemon and orange peels. Add sifted dry ingredients, alternately with shredded zucchini. Beat well. Add 1/2 cup chopped nuts, if desired (not in the final nutrient analysis). Pour into greased 9x5 inch loaf pan. Bake in preheated 350 F oven for 55 minutes. Cool 15 minutes in pan. Serves 1 loaf
