Whip a second quart of whipped cream to be stiff and scoop-able.
Add 5 quarts of eggnog and half of the loose whipped cream to a 14 quart sized bowl. Sift 1/3rd of nutmeg over the eggnog and then add the grated rind of two oranges. Gently stir to incorporate all ingredients. Pour the last 5 quarts of eggnog into the bowl and the last of the loose whipped cream. Add another 1/3rd of the nutmeg and stir until blended.
Take the thickly whipped cream and with a spatula place large pillows off whipped cream over the entire surface of the full bowl. Reserve some to replenish later as it's used up. Dust the top with the remaining nutmeg and grate the rind of the last orange over the top.
To serve use a ladle and break up the whipped cream pillows and pour into 5 oz container. Best if served with freshly grated nutmeg and orange on each serving.
