Pasta, mushrooms and tomatoes go well together on their own, but when you add the flavors of Italian Sausage.
1 Place a large pot of generously salted water onto boil. When boiling add pasta and cook until al dente. Reserve approximately 1 cup of pasta water prior to draining pasta. Drain.
2 Into a large saut? pan add: butter, olive oil, sausage and heat over medium heat. Add onion and garlic and saut? until onions are softened. Add mushrooms. Stir to combine. Season with salt/ pepper. Cook for approximately 2 to 3 minutes.
3 Add tomatoes stir to combine. Season with salt, pepper. Reduce heat to low and allow sauce to simmer.
4 When pasta is cooked, transfer to saut? pan. Toss to combine. If mixture is too thick loosen with a little pasta water.
5 Garnish with parsley and optional cheese, if desired.
6 Serve immediately.
7 Cooks Notes: You can substitute any short cut pasta you prefer. Add red pepper flakes to the sauce for a little kick.
I used penne rigate pasta (thats one of my favorites besides bow tie) & that's all I had here & a can of diced Rotel Tomatoes with hot sausage & it was Awesome!!!!
