A delicious Mexican appetizer or breakfast delight to start your day!!!
In a skillet, over medium heat, crumble the chorizo.
While the chorizo is cooking, stir the eggs in a separate container.
When the chorizo is fully cooked, pour in the eggs and scramble until the eggs are fully mixed and cooked. Remove from heat.
Lay 6 of the tortillas on a flat surface.
Sprinkle cheddar cheese to form a healthy layer.
Spoon the chorizo on top of the cheese to cover the cheese (about 1/4 cup).
Sprinkle an equal amount of cheese on top of the chorizo.
Top with remaining tortillas.
Heat large skillet over medium heat.
Add a small amount of oil to coat the bottom of the skillet.
Cook one quesadilla at a time until golden brown on each side, about 2-3 minutes each side (you may choose to keep about half of the chorizo in the skillet on low heat, stirring occasionally to keep from cooling off).
Cut into sixth or quarter-size wedges.
You may choose to add sour cream, shredded lettuce diced tomatoes or salsa, depending on your preference.
