This is one of our favorite zucchini bread recipes that mom used often.
Grease loaf pans, then line the pans with aluminum foil (make the foil the width of the pan, but longer on the length so as to have handles on each end of the loaf of bread to assist with removing it from the pan).
Grease the pan again.
Sift together flour, cinnamon, soda and baking powder; set aside.
Combine sugar and oil.
Add eggs to sugar mixture.
Stir zucchini and vanilla into sugar mixture.
Stir in dry ingredients.
Fold in nuts and fruit choice.
Pour into prepared pans.
Bake 325 degrees for 1 hour or until toothpick test.
While still slightly warm, drizzle with powdered sugar glaze.
