Mix together sugar, eggs, oil, and zucchini. Add in rest of ingredients. Bake at 325 degrees for one hour, less for mini loaf pans or muffin tins. Makes 2 large loaves, 5 mini loaves, or 24 muffins.
Can also add chopped nuts if desired.
