Preheat oven to 375. Grease 2 9x5x3 inch loaf pans.
Beat eggs lightly in a large bowl. Stir in oil, sugar, zucchini and vanilla. Sift flower, baking powder, baking soda, cinnamon and salt onto wax paper. Stir into egg mixture until well blended; stir in raisins and nuts. Spoon batter into 2 well greased loaf pans. Bake in moderate 375 degree oven for 1 hour, or until centers spring back when lightly pressed with fingertip. Cool in pans on wire rack for 10 minutes. Remove from pans and cool completely. Makes 2 loaves.
