Beat eggs until thick and lemon colored. Gradually beat in sugar. Stir in oil, then zucchini and vanilla. Stir together flour, nuts, cinnamon, allspice, salt, baking soda and baking powder. Add egg mixture, mixing only until all ingredients are moistened. Pour into 2 9x5x3 inch baking pans
Bake 325 degrees oven for one hour and 10 minutes or until knife inserted near center comes out clean. Allow to cool in pan 10 minutes. Remove to wire rack to cool completely. Makes two loaves.
