2. Mix together tomatoes, basil, olive oil, balsamic vinegar, sea salt, and black pepper, then set aside.
3. Cut zucchini into 1/4 inch slices.
4. Coat baking sheet with cooking spray and place zucchini spread on tray.
5. Lightly brush zucchini slices with olive oil.
7. Bake in oven for two minutes, flip and coat again. Cook for two more minutes. Should be firm, not mushy.
8. Take out of oven and spoon mixture and top with cheese. Return to oven for two minutes. Then enjoy
