Preheat oven 350F. Oil a 2 quart casserole dish.
In a small bowl combine the eggs, olive oil, salt and basil. Also the onion if you are using it.
In a larger bowl combine the zucchini, bacon, cheese and pancake mix.
Mix the egg mixture into the zucchini mixture. Mix well and transfer to pre-oiled dish.
Bake for 50 minutes or until cooked through and golden.
Variations: I have used fresh basil instead of dried. I have used the precooked crumbled out of the bag bacon. I have also made without meat altogether and I have tried it with cooked and crumbled sausage. If you like onion, add in a 1/4 cup finely diced. Keep an eye on it to make sure it does not overcook.
