Preheat oven to 425. Line 2 rimmed baking sheets with parchment paper. Cut zucchini into thick french fry style sticks.
Arrange 3 shallow dishes. In first bowl, stir flour, 1 tsp. salt & 1/2 tsp pepper. In the second bowl, whisk the eggs, 1/2 tsp salt & 1/4 tsp pepper. In the third, combine panko or regular bread crumbs, parmesan & dill (optional) & 1/2 tsp salt.
Dip zucchini pieces in flour, then egg, then breadcrumbs.
Arrange zucchini in single layer, without crowding, on your baking pans. Bake 15 min. then rotate.Continue to bake until coating is golden & crisp. 7-12 min.
