Crispy zucchini
Using a thin sharp knife cut the zucchini lengthwise 1/8 inch thick. Cut each slice lenghthwise into 1/8 julienne strips.
Discarding the pulpy center, pleace the zucchini in a colander and toss it with the salt and set aside to drain for 20 minutes.
Pat the zucchini dry with a paper towel
